Abstract Spices are used widely in South Asian cooking. In addition to adding flavor to the dishes they are also known to have other benefits. The project is to test some of these spices for their effectiveness in preserving food at room temperature. This investigation can lead to the discovery of a natural food preservative that can slow the growth of microbes that can spoil food.
